Rotary trolley oven
For 80×100 cm pans, suitable for cooking food products. The cooking chamber is illuminated by low-voltage lamps, which are easy to access for eventual replacement. The steaming system, either manual via by-pass valve or automatic with programmable time, feeds a steamer having a large thermal mass and large exchange surface area. The hot-air convection heating system makes it possible to obtain products with homogeneous baking. Stainless steel facade and baking chamber for durability and easier cleaning, while the exchanger is made of high-temperature steel. The oven access door is equipped with an internal safety handle, when the door is opened, both trolley rotation and heat production are stopped automatically. The trolley rotation gear motor is equipped with adjustable torque limiter. To suck up excess vapors that may escape when the door is opened, an electric fan is installed as standard. On the roof of the baking chamber is a valve for vapor extraction that can be controlled manually from the front of the oven. The control panel is 24 volts, temperature control is carried out by thermostat, in case of failure of the latter a safety thermostat pre-calibrated at the time of testing intervenes. The installed electrical power is 3 Kw., the installed thermal power is 90,000K.Cal./h.
